Rice and sausage, anyone?

Ingredients.

One package of hot Italian sausage
glug of olive oil
one onion chopped
one green pepper chopped
two cloves garlic minced
one tbsp paprika
one cup long grain rice
2 cups chicken stock
salt and pepper to taste

Put a glug of olive oil in a large saute pan. Peel the sausages and cut them into "squares". Put them in the hot pan to brown. Once browned add the onion, green bell pepper, garlic, paprika, salt and pepper. Cook a few minutes to soften the veggies. Add the rice and chicken stock. Put a lid on it. Simmer for 20 minutes. This will feed 4 or 5 people as an entrée. If all you have is mild Italian sausage add a 1/2 tsp red pepper flakes.

I make something similar on a pretty regular basis but instead of fussing around with the rice I just use Uncle Ben's microwave packs. I know it's not as cost effective but it sure is a time saver....and one less pot to wash!

Sounds like a poor man's Jambalya. While there why not add some shrimp? Or crayfish?

Try adding finely chopped celery, carrots and tomatoes, when browning. Don't use too much.
 
I actually like sausage with beans and some thick bread (like whole wheat or the awesome black German bread) on the side.

I don't eat celery or carrots but I did forget the tomatoes in the recipe and the white wine. 1/2 cup white wine while cooking and a chopped tomato after it comes off the fire. Thanks for the reminder. Senior moment, I guess.

I hate Italian sausage because of the fennel, but I love beans and sausage recipes and otherwise this one looks good. If I remember, I'll post my Creole red beans and rice recipe.

I do something similar to the OP, except I like to throw in a bunch of chipotle chilis, thai chilis, and mushrooms.... ...and use whole wheat rotini instead of rice.

Try Johnsonville brand if you have it in your area- no fennel. Your meat shop should be making Italian sausage with it or without it, try asking them.

Well, when I buy sausage I usually buy it at Whole Foods or (very rarely) a butcher that's about a 2 hour drive away (Excellent butcher). And even their Andouille has a little fennel in it. I know people love it, but fennel is not my favorite in sausage, although I like it in other things.

Why not buy at another store? the irony here is I am from Chicago where fennel is always in Italian sausage but now I live in Houston and you will never find it in sausage anywhere.

Why not fry the sausage then cook at 350 for 15 minutes do the cheese does not burn. I find baking raw sausage of any kind gives it a fishy taste so I fry it half way then bake it.
 
A quickie:
Cut up a couple links of raw Italian sausage then fry over a medium heat. Slow heat two cans of Italian stewed tomatoes adding the cooked sausage and 1-2 cups cooked rice and Italian seasoning, cayenne pepper, salt & pepper and 1/2 cup parmesan cheese and simmer for 20 minutes. Serve with garlic bread. Easy & quick.

I'm also in an area with heavy Italian-American influence, so fennel is all around. So everywhere I go, no matter where I go, there's some asshole putting fennel in their sausage to "make it better." Erf.
