I like to eat well, so I have learned to cook certain dishes. I can't get crayfish at a decent price in TX, so I substitute shrimp in my cajun dishes. I love a good shrimp etouffee. Or, try shrimp mosca, a more Italian version, just google it and you can find the recipe.
Oh heck, here it is: http://moscasrestaurant.com/fresh-seafood-recipes , I peeled my shrimp to make it easier to eat. Mosca's is a solid (out of the way) restaurant in the New Orleans area but a ways out of town. Old school cooking.
Here's a pic of the Shrimp Mosca, which is olive oil based with Italian seasonings instead of the french style which is butter based with onions, bell pepper and celery sauteed.
