not too bad.
 
My homemade hummus (throw in salt and pepper, lemon juice, a spoonful of unsweetened peanut butter, 2 drained cans of chickpeas, olive oil, a whole garlic clove, and some of the canned chickpea juice- just enough to liquefy it all in a blender) with toasted pita bread, sliced tomatoes, and green olives.
 
Made the wifey some handmade blue cheese dip. Homemade Mayo, with cream cheese, blue cheese for her hot wings. I can't stand any of that personally, so I had to have her tell me if I got it right. Evidently I did.
 
Had a bunch of beef pho broth left over from Pho yesterday. So, heated that back to boiling, added some new noodles, and eventually poured it over a large bed of thin sliced beef, thin sliced onion, thai chilis, basil leaves, and whatever the bean sprout like things that come with it are called...


Forgot to grab more cilantro from the garden though.
 
And....leftover beef in a wrap. Greens from the garden, ditto the tomato, chopped onion, mayo, cheddar, and a bit of one of my super-hot chilis to nibble on the side.
 
Since tonight is the Texans Cowboys game and we have friends over unexpectedly, I decided to try cooking the filet mignon I bought.

Made a rosemary garlic butter, put it in the fridge.

Pan seared the steaks in Olive oil and butter 2 min a side then put the pan in the oven at 415 for 4.5 and 7 min (she likes her more rare than I do). Take out, put under tin foil 5 min per steak and melted the butter on it.

OMGoodness... I've never successfully pan seared a steak, I generally grill them. But today I gave it an honest effort and it was AMAZING. Not better than mesquite grilled, but pretty damned good none the less!

Ordered Chinese so I'd have some leftovers to pack up for a few more lunches.

I haven't eaten yet, but I'm about to.

For the last few months, I've been planning a feast involving several racks of spareribs. I'm still experimenting with the cooking process, but this time I cut them into singles, threw them into a large container with several bottles of terriyaki-sauce and left them in the fridge for a couple of days, and now they are going into the oven.

I looked up different recipes. Many recommend not doing it the way I'm doing it, because it makes the meat 'mushy', but that's exactly the effect that I'm going for.

Basically, I followed that. But I didn't have coriander (how I know not...) so I added some black peppercorns and basil to the mortar and pestle and then followed the cooking. CAME OUT AMAZING. Served with a side of Caesar Salad.
 
Im still a silent partner in my company, and so I was invited to a meeting with the catering group who will be providing the food for our anniversary party- essentially it was a taste test.

They gave me samples of buttered vegetables, mushroom soup, roast beef, baked fish fillets, spaghetti bolognese, salads, roasted chicken and assorted desserts. Burp.

I had to fill out a questionnaire- that was the only boring part of it.

Future lunches: I did a huge pasta sausage thing.

"Pasta": 6/6 whole wheat, 2/6 edameme pasta, 2/6 black bean pasta. The latter two are basically half-protein/half-fiber.

Filled up six meal-sized containers.
 
Had some leftover grilled chicken breasts and didn't feel like having another wrap sooo.....

I chopped one up, put beans over it, and microwaved it. Mixed with some rotini al dente and cheddar (which then melted) and a handful of thai chilis. Kind of an odd combination but it worked.

Sauteed shaved steak/bacon/bone marrow/green pepper/onion/mushroom. Put in a wrap w/ mayo, cheddar, lettuce, and ghost chili flakes.
 
I made a pizza again. Pepperoni, Sausage, shaved steak (leftovers from the above described). Normal moz base, but cheddar on top.
