Maybe but I think you need the damp towel to aid in steaming the eggs.

I'll have to try that (except my oven is large and takes a long time to heat up ). That could really come in handy when I'm boiling more than 2 dozen.

I think you'll appreciate this "analysis" of the best way to hard cook an egg from thekitchn.com. Took me awhile to find it again and I just posted a junky one earlier.

Well I preheat for sure. And time depends on what shelf you put them on too. I experimented a bit at first.

do that, empty the water and shake the pot with the lid on. remove the lid and find that most of the shells have peeled off
You must have to shake that pot really, really hard. I do pour out the hot water and replace it with ice. With a good egg, I expect to crack it where the air bubble is and peel it in just 2-3 movements. It really ticks me off to pick at the shells.

Farm-raised are healthier. And they don't have to be refrigerated either.

Yup. I loved my layers. Lost my last few to a bobcat and havent gotten more but will someday. They free-ranged in my pasture with the horses and were a kick to watch. But...with that freedom came danger too

let that ice sit and do its work. in a few minutes the outer shell will separate from the inner egg and that pot shaking will do most of the shell removal for you

Sigh, I know. Hawks making lazy circles in the sky, just as the song from "Oklahoma!" goes. We think coons got the last of the chickens even though they were locked in every night. Whatever it was ripped their heads off. Terrible.

I'm going to try this experiment. Still think that you're talking about super-vigorous shaking. I will see!
