However, it's more likely China wants to protect its border from hundreds of thousands of starving refugees if a shooting war breaks out.

Maybe. IDK. If Japan got involved, we might very well have China turn against us. There is no love to be lost between Japan and its neighbors. I am not sure anyone who has never been in or been friends with people in that region can fully appreciate the engrained hatred for the Japanese that some harbor to this day from WWII. If NK attacked Japan and Japan did anything in response, we might very well see Korea become united in a way that we would not want with troops on the ground.
