Been rererereading the Dresden Files, and have been thinking about a few of the mysteries. I think I've solved one: McAnally.
The publican, being described as "He is a tall, gangly man with a shaved head. He wears black pants, a white shirt, and a white apron that is always spotless". The Outsider also calls him a watcher. And he's respected by pretty much everyone. And can take a bullet to the stomach with no issue.

Mac "Isn't a Greek god, nor a scion of the gods, and we won't see much of him until the big trilogy at the end.
So he's white, he's not a Greek god, and he's involved in the apocalypse.
He's Heimdallr!
Heimdallr is described as the whitest of gods, and the herald of Ragnarok, the apocalypse.
From Poetic Edda:
It all fits, Mac is fated to watch until the apocalypse, which we know is coming in the final trilogy of the series.
I'll flesh it out more tomorrow, when I'm a bit more awake.

Himinbiörg is the eighth, where Heimdall,it is said, rules o'er the holy fanes:
there the gods' watchman, in his tranquil home,
drinks joyful the good mead.[SUP][/SUP]
Loki tells Heimdallr to be silent, that he was fated a "hateful life", that Heimdallr must always have a muddy back, and that he must serve as watchman of the gods.
