The only negative things about eating liver is the cholesterol and possibly over doing it on the vitamin intake if you eat too much of it.

The only toxins you'd have to worry about is if you don't eat organic meat and elect to eat meat from cows that have been pumped full of drugs.

I prefer organic meats whenever I can procure.

Not everyone can eat "organic" meat. (God I hate that movement...took a good idea and made it completely irrational). And it doesn't matter organic or not since there are plenty of toxins created in the body which have to be filtered out, that's why there's a liver in the first place. If being "organic" meant that there was nothing in the blood which needed to be filtered, we wouldn't have evolved a liver in the first place.

When I mean organic, I mean local farm, small farm estates, etc...

If you can afford that and get it at the right time, that's the best you can do. Less you slaughter the animal yourself which isn't so much fun.

The whole organic thing I think is overboard. Is there a problem with continual injection of antibiotics and other things into an animal over the entirety of it's life? Yes, of course, and I understand arguments against that practice even though it can help increase yields. But if the animal is sick, then give it some damned antibiotics. It's not bad to use them to actually fight illness, but it can't be an "organic" cow if you do.

Besides "organic" is not sustainable, you cannot produce the yield necessary to continue to provide affordable meat to the populace.

Yes, the liver filters the toxins. It doesn't store them. You're not going to be ingesting a bunch of toxins by eating liver. The only possible toxins you could ingest would be from the drugs given to a cow. But that goes for all of the meat from a drugged cow.

When I say organic, I mean 'not fed drugs and hormones and actually fed a normal diet for the animal in question'
