I type about women who choose to have this done all the time. They have witnessed first hand their mothers or sisters, etc., suffering with breast cancer and have decided for themselves that keeping the breasts is not worth the agony.
I salute women who pre-emptively do this.
That said, I'm a man in my late 50's and it kind of hits home with the old prostate cancer screening and preventative surgery that was quite prevalent in the last decade and has now started to come into question. It's believed now that most men who don't have family histories of prostate cancer may be unnecessarily going under the knife based on early screening and detection. It seems to be understood that most men will have prostate cancer sometime late in life but men seldom die from prostate cancer because something else gets them before the prostate cancer can. Why risk your later years with possible incontinence, impotence, and other side affects from prostate cancer when the treatment is likely worse than the disease?
We don't know Ms Jolie's family history, other than the fact her dad seems to be crazy, so I'm willing to bet if she did indeed have the surgery there must be some serious family history that caused her to act. I wish her well going forward.

Your anecdotes don't disprove the general truth that surgery on not-very-structurally-important body parts is fairly low-risk. The biggest risk is actually the anesthesia. Infection is pretty far down the list.
I'm sure I could find a handful of articles of people dying of scarlet fever in hospitals. Doesn't make it a legit enough concern to avoid preventing yourself from getting cancer.
