yeah I don't think I ever had meat in my lunches when I was a kid, it'd get nasty because they don't let kids refrigerate their meals at most schools.

Food combining is the key to getting enough protein from vegetable sources.
3 parts whole grain to one part legume = a complete protein.
This could be dried peas and barley; pea soup or something.
This could be beans and brown rice.
This could be lentils and buckwheat.
This could be peanut butter on whole wheat bread, or vegetarian chili with cornbread.
Oatmeal and popcorn are also whole grains. Whole grain ready-to-eat cereals are available. Millet is good, if you can find it. Cornmeal is a whole grain. Kashi (the hot cereal that you cook for twenty minutes) is an excellent source of whole grains, and can be mixed with beans or lentils and eaten as a sort of pilaf- it's unsweetened.
Some people consider soybeans to be a complete protein, but they actually aren't; they're a legume. Garbanzo beans are a good legume, and kids usually like them; hummus is made from garbanzo beans mashed into a paste.
Nuts and seeds are good sources of protein; flax seed is good on everything. If you have a coffee grinder and grind it up, it's far more digestible.

Oh, and these whole grain and legume combos don't have to be eaten mixed together or even at the same meal, really. As long as you average 1 part legumes to 3 parts whole grains in your day, and consume the recommended daily intake of both, you're likely getting enough protein.

I'm not a huge fan of flaxseed oil, I used it when I was vegan but I always thought I could taste it when I put it in stuff, and didn't really like the taste.

I've never tried the oil; I just get whole flax seeds; they're cheap as dirt.
Then I grind them coarsely in my coffee bean grinder and sprinkle them on everything I eat.
They don't have much of a taste at all. Maybe just a little nutty taste.

I put my vote in for chick peas/garbanzo beans and/or hummus.

MMMMMMMMMMMMMMMM

This is the recipe I use (though sometimes I used canned beans):

INGREDIENTS
3 cups dry garbanzo beans, soaked overnight
1 pinch baking soda (optional)
3/4 cup tahini paste
1/2 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1 teaspoon ground cumin
salt to taste
1 tablespoon extra virgin olive oil, for drizzling



DIRECTIONS
Rinse the garbanzo beans and place in a pot. Fill with enough water to cover by at least 1 inch. Bring to a boil and then simmer over medium heat until the beans are very soft, 1 1/2 to 2 hours.

Drain the beans, reserving some of the water to use later. Reserve a small handful of the whole beans for a garnish. Transfer the rest to a blender or if you have a hand blender, a large bowl. Blend the beans until smooth, adding 1/2 cup of olive oil gradually. Add some of the reserved water if needed to help it blend. Add the tahini and blend in along with the lemon juice. Season with cumin and salt.

Spread the hummus into a flat serving dish and garnish with the reserved beans and a drizzle of olive oil

Yes, it is only for lunch that he can't have meat. Thanks for the info! I wonder if he'll eat lima beans.
