If you like it and can afford it, there's no reason to deny the pleasure of seared animal flesh. Medium rare bison, elk, or even angus is a delight that should not be avoided. the last meat I had was some chicken soup a month ago. it was chicken stock with veggies.

Bison tastes very similar to beef but elk is very good.

That depends on where you get it. We celebrate "Meatsgiving" and "Meatmas" in lieu of Thanksgiving and Christmas. Part of that is making...well, exotic is probably too strong of a word, let's just say "unusual"...meats. We had some wild boar from Northern Florida and/or Southern Virginia, and it had an off-putting taste to most of us. The meat was harvested and butchered by very reliable people, so it wasn't a case of a bad choice in prey. I suspect their diet gave the meat this quality. From the same source, the bison, elk, and plain-old angus were great.
