What did you have for dinner? -Part dois

Made a beef & veggie stew last night.


Browned a brisket on all sides, browned garlic, browned a mix of veggies (celery, carrot, pea, corn, mushroom, onion), deglazed the pan with some red wine and chicken broth (didn't have beef broth on hand, oh well). Arrange in a closed container. In the oven for somewhere past 3h @ 325. Came out perfect.

Wife and I decided to go for a couple of drinks and it turned into a minor feast.

6 oysters, 6 cherrystones, pile of nachos, plate of buffalo wings. Booze.
 
Seriously, people. Try cooking Empire Kosher chicken at least once, if you see it somewhere. The Kosher rules they follow involve various things like using healthy chickens that are "free roaming", there's a salting process involved in the Kosher preparation that is basically a brine that rabbis approved long ago, etc.

Looks like dinner will be an assortment of meats, cheeses, breads, etc. A place called "Eataly" opened in Boston. The wife and an old friend went while I was working (they took the day off) and are on the way back with an assortment of goodies.
 
had a couple kinds of rice, a bit of chicken, and lo mein noodles at a local Chinese buffet with friends. it was fun.
 
I had a business luncheon so it was late by the time I got home. Since my son had already eaten I just opened up some canned Spanish and Portuguese sardines in oil, a small wedge of cheese, wheat crackers and salami, along with tomato and olives.

Last night was a kind of lazy meal. I grilled sausages and served with a mix of brown rice, red quinoa, pink beans, and chopped scallions. We're talking 5-7 minutes of prep time for everything that wasn't sausages, then a few visits to turn them on the grill.


I was going to do a baked breaded Empire chicken tonight (cut up, not whole), but then I saw $1/lb hams that were overstocked for New Years (and probably Christmas too), so that's what tonight will be.

I figure some kind of maple glaze w/ paprika and rosemary. I set it on top of a sliced up apple w/ garlic.

I made vegetable soup a week ago using all the bones from two standing rib roasts we had on Christmas day. I also froze a hunk of prime rib that was not confiscated by the guests who took it home in all their leftover containers. The ribs from the two roasts made a rich stock.

It rocked. I have a three more containers of veggie soup in the freezer to pull out when I don't feel like cooking,
 
Tonight we had barbecued boneless chicken breasts and Fettucine Alfredo. It was good but I feel a little guilty that I didn't prepare any veggies. No dessert.

Home made vegetable soup is one of my favorite meals to prepare and eat. It's usually out of leftovers, diced tomatoes, tomato sauce, beef chunks, hotdogs, veggies, mushrooms, onions, kidney beans an a variety of spices from black pepper to cumin.

Partially seared zucchini, roast beef encrusted w/ garlic and spices. Red wine.
 
Tuna salad sandwich (I like to add pickle relish and peas to it) on toasted whole wheat English muffins. Romaine lettuce and tomato salad with extra virgin olive oil and that awesome balsamic reduction that I brought over from my travels in Italy- might as well use it all up. Oh and a couple of bananas and some chocolate and almond turrones for dessert.

Wrap:


ground beef, onion, mushroom, hot peppers stir fried, put over a whole wheat wrap w/ mayo, mustard, cheese, lettuce, chopped tomato, chopped pickle.
 
Korean food: beef bulgogi, japchae noodles, pajeon (Korean style vegetable pancake), fried Korean dumplings, sauteed spinach (my fav) and the ubiquitous kimchi.
