What did you have for dinner? -Part dois

It's still early, living on CA. time, but tonight I am making chicken parmigiana accompanied by mini penne pasta, a butter leaf oil and wine vinegar dressed salad, with some of our own olives from our grove, and a very nice WA. state Sirah.

Life's good. :)
 
Chicken salad sandwich on poppy seed Kaiser roll, dill spears on the side.
Chicken salad is a favorite of mine. I usually go with chicken, celery, apples, tarragon and mayo. I've heard of some spicier versions....any suggestions?

Tonight's dinner is a breaded baked chicken cutlet, sliced on a green salad.
 
I made a pot of beef vegetable soup and warm crusty bread. For some strange reason I added about 1 TBL of salt but still, it was never enough.

I don't get that fancy with chicken salad. Just use chicken breast from a can, add mayo, onion, parsley and other seasonings. Your chicken cutlet sounds good!
 
Ordered delivery from an Indian restaurant we never tried before, the food was not good, half went in the trash. We had lamb and shrimp dishes, two kinds of rice, regular and saffron, even the rice was bad. We've had Indian food a few times in the past that was very good, won't be using this restaurant again ever though. :sick:
 
Baked chicken thighs with seasoning. If you can find The Keg chicken seasoning in your local supermarket pick it up. You won't regret it.

For a side mixed veggies.

That is disappointing. Hope you find a new place
 
BTOs (bacon, tomato and onion) with mayo on Oatnut bread. We oven baked this thick sliced bacon on a slotted oven pan at 400 degrees for 30min. Came out great! Dessert will be Baskin Robbins Pralines and Cream ice cream.

My wife's jambalaya recipe: shrimp, crab meat, chopped boneless chicken breasts, tomato sauce, green, yellow, red, orange peppers, spices ( and some things I'm probably forgetting), and black beans and white rice on the side. Suffice it to say I exceeded my suggested daily caloric intake, and have no regrets. Looking forward to round two tomorrow night, when it's even better; which I thought was impossible.

How's the meat thing going so far, Helix?

i don't feel great about it. i've been working in some vegetarian "meat" again in the past week, and have begun cutting calories a bit. i just felt like crap going full throttle on a vegetarian diet. under a normal amount of stress, i did ok. i wonder if it was just too many carbs and not enough iron. i don't know. this past year has been like final exam season most of the time, and i'm not 22. but if you hum a few bars, i'll fake it, as they say. ;)

Just my 2 cents, Helix, but eating too many carbs, too much cheese, depending on genetics and exercise routine, can raise those cholesterol #s to an unhealthy, long term issue. We try to stick to turkey and fish mostly. Those Asians tend to live longer than most for good reason, from what I can discern.

I have never heard of chicken breast in a can lol !!!

I think only 1 in 7 people are susceptible to raised cholesterol through diet.
 
Exercise and mobility is the key to good health...Asians don’t sit on their asses all day. Calorie intake was higher in the U.K. in the past and people ate a high fat diet, but they were slimmer. Bus conductors were found to be generally slimmer and healthier than bus drivers. Another thing is that the concept of eating little and often is a disaster...people never used to snack like they do now...constantly raising blood sugar levels causes the body to store fat.

Is that a real product? Lol Doubt you have heard of Wacky Packages but collected them as a kid. They came in a pack like baseball cards and were stickers with fake products mocking real products.
