    Also had chicken thighs. Sliced them really thinly and then stir fried them with bean sprouts, ginger, garlic and chilli. Fried rice with scallions and Thai omelette (kai ji-ao) to accompany. Best kind of dinner for a hot summer evening.... and boy, is it hot?!

    Well, no fire department required. Yay!!!!

    I was disappointed; not that I won't try it again, though. I used the wood chips they sent, Alder, and would have far preferred Mesquite. I'll have to get some. It was really easy to use, as advertised, and really? No smoke of any consequence leaked out into the kitchen. I read the instruction book and looked on line for timing and all said 30 minutes. Since it works like a roaster, I thought 45 would be better; so compromised at 40. Damn it! I should have used the meat thermometer!

    At any rate, after the smoker, we put on some BBQ sauce (Sweet Baby Ray's) and put it on a really hot gas grill to char the outside -- and I think we should have charred it a bit more -- Tom's sometimes a weenie about charring. So....between a soggy skin and slightly underdone chicken?

    I'd call it a failure.

    (But. I'll try it again as soon as I get "under-done chicken" out of my head.)

    Bone in chicken breasts pre marinated on the grill, my wifes insanely good baked mac and cheese and corn on the cob. Oh, and beer.

    We had soy-marinated pork tenderloin on the grill tonight with smashed potatoes and sauteed brussel sprouts with a balsamic glaze. The smashed potatoes are really good. You take a couple of whole potatoes, put 'em in a pot and fill it half-way up the potatoes (maybe a little more) with water. Add appropriate amount of beef boullion. Cook with cover on. When the potatoes are still firm, but close to done, add butter or margarine, salt and pepper. Run out to the garage and get a mallet. Put aluminum foil over the potatoes and give 'em a whack to break 'em open. Keep the lid OFF and cook 'til all the water evaporates and the butter browns the bottoms. Yum.

    I was feeling creative. Took a few garden grown tomatoes and stewed them. Grilled a few think steaks with a hint of lime juice and some sauteed cipolinni onions, then drizzled the stewed tomatoes on top.

    Sounds great...cept I would skip the stewed tomatoes and have them raw drizzled with olive oil and garlic and light basil and parsley
