    Sorry for the confusion. My mother personifies all that is Spain for me, the "old country". The music, the food, the atmosphere. New York is my home although I am living in another place now.

    She made fried flounder white rice with red sauce and onions.

    Pastelillos ~ much different than Empanadas in that Pastalillos is deep fried and Empanadas is baked. The filling is spiced with garlic, onions capers etc.







    For dessert homemade Flan.

    I went the super fattening direction for a change today.

    I made a homemade mac and cheese inspired casserole of sorts. I start the cheese sauce with a roux, whisk in a couple of cups of milk, and then let that cook until thickened. then dumped in handfuls of shredded chedder and also some shredded Monterey jack as well as some Parmesan. To that I added minced garlic, NM chili powder, a bit of thai chili powder for heat (homegrown and freshly ground from dried peppers from last years garden), and cumin.

    While the sauce was working I also browned up abt. a pound of ground beef, then added some diced onion a tad of garlic and chili powder and cumin to that, I added a cup of water to disperse the seasonings and then cooked the water off. On another burner I had rotini pasta cooking (spiral).

    Grabbed a large casserole dish, dumped in the ground beef, the pasta, and then smothered it with the super cheesy sauce goodness, mix it all up, smother more chedder over the top and finish with thin slivers of onion and sprinkle with more NM chili powder, and into the oven for 20 minutes.

    Being the hot pepper lover that I am, I also added habenero pepper powder to my plate (again home grown, homemade, and fresh out of my spice grinder [actually re-purposed coffee grinder]). I am stuffed. probably 100 calories and years worth of fat per bite, but ohh was it soo good!

    Fresh (picked this morning) garden salad, steamed HG sweet corn, baked pot, marinated/grilled venison kabobs.
