Pumpkin shrimp soup with lime

Pumpkin soup with shrimp and lime

6 cups pumpkin cut into 2 inch cubes
3 leeks chopped
4 cups chicken stock
1 tsp salt
¼ tsp pepper
1 lime (zest and juice)
Pinch cayenne pepper
1 cup whipping cream
8 oz cooked shrimp (shelled)
6-8 cherry tomatoes halved
2 tbs chives chopped

In slow cooker combine pumpkin, leeks, stock, salt and pepper cover and cook on low for 8-10 hours or high 4-6 hours
Strain vegetables, reserving stock. Purée vegetables with 1 cup reserved stock until smooth.
Return to slow cooker, add remaining stock, lime zest and juice, cayenne, cream and shrimp. Cook on high for 20 mins.
Garnish with tomatoes and chives.

I suppose you can make in a regular pot on the stove, just remove and purée when the pumpkin and leeks become soft.


*edit* First time I made this the lime was rather overpoweing I suggest you cut it in half or at least dont squeeze the lime to hard trying to get all the juice.

I've copied the ingredients onto my shopping list.
 
Update:
Making it for a party tomorrow. Will be 20 people so its using all of one of our Halloween pumpkins. (I have 2 kids and they each like to carve one)The other one will be turned into pumpkin butter later this week.

Yes this is a good way to use up your pumpkins that have been turned into jack o lanterns. Better than just throwing them out in any case
