Brats come to mind real fast, but what else?

Beer bread comes to mind too.

Even if it's just the marinating part.

I make beer batter sometimes, (beer, flour, pepper) when cooking fish if I'm frying it. It's beyond delicious.

Works great on chicken, onion rings, and even mushrooms too.

Try with adding a little Old Bay once and you can almost trick your mind into thinking chicken bites are crab bites. :mrgreen:
 
I use it with ground venison. Sometimes to deglaze a pan.
 
Beer can chicken.

Drink 1/4 of a can of beer, shove garlic, chopped onions and lemon into beer can
Rub whole chicken with olive oil, thyme, rosemary, salt & pepper
Place the chicken on the beer can and roast in the oven or on the grill
Make sure to place the chicken on a baking sheet to catch the drips
Delicious.

Yeah we do this a lot only we call it beer butt chicken.
Not all beer cans work equally (need the right size/shape)
Best buy a whole bunch of different ones and keep drinking til you find a can that fits ;)

I use beer for very few dishes, because it can make things bitter. But for crispy Bavarian pork knuckles (Schweinshaxe) you want to put beer in the water you boil it in before roasting it.

If I'm drinking a beer while I'm grilling, and some of it accidentally (*ahem*) spills onto the meat, oh, well.

I do my brats in beer, but not like most people do. Most people just boil their brats in beer. What I do is to brown the brats in a skillet and then pour a bottle of beer and a couple tablesppons of good BBQ sauce over them. Then reduce the heat and turn the brats every couple of minutes while beer and BBQ reduces. WATCH IT CLOSELY, because it will go from a delicious sauce to a nasty burned mess in about 1 minute. Once the sauce is nice and thick, give the brats one last turn and put them on the grill to get the nice grill marks and baste with the remaining sauce. Once you do your brats this way, you'll never do them any other way.
 
I had a short phase of cooking with beer but generally I dont. The only thing I do with beer constantly is chili, especially chocolate chili with a rich Amber. I have a Andechs "cooking with beer" cookbook but have not used it in 20 years.

I did beer mac and cheese at my restaurant which was very popular, used a stout for that.
 
There's also my wife's easy beer bread recipe:
1 12 oz. bottle of beer (using the fruit based beers or the like can add some nice flavor)
3 cups self-rising flour
1 cup sugar

Stir just until combined - 12-15 stirs is just about right (don't over-mix or it will be tough)

1 hour in a 350 oven. Brush the top with melted butter when you take it out.

Nothing else? There's no yeast? Is there enough yeast in the beer to take the place of conventional yeast?

This is a quick bread, not a risen bread. It's closer in texture to banana bread or zucchini bread than white bread. It's as easy a recipe as there is (just don't over-mix it) and it goes with just about anything. We've served it with everything from Thanksgiving dinner to a Sunday afternoon BBQ to a treat at a Bible study.
 
Brats steamed over beer and sauerkraut steamed with wine. Beer can chicken -you need a beer can chicken assembly found on line. Empty out a few ounces of the beer and place the whole marinated chicken over the beer and bake, the recipe is everywhere on line.
 
About 25 years ago there was a small joint called Brats N Beer near the Milwaukee airport. They went through tons fo grilled onions serving only burgers or brats both smothered in more onions than I ever saw. It was heaven.
