I challenged the veracity of the biased OP and I was called a saboteur. He can't debate. Now let us get back to the recipes and discussing food and restaurants. That is this forum's raison d'être.

eating healthier is self help. If you can't figure that out, you should stick to the funny pages.

The good news is that healthier eating is not going away anytime soon. Plant based diets are getting more popular and so is vegan eating.

An insult to all American cooks over the centuries who prepared tasty potatoes and vegetables. Not forgetting that the American dinner plate was often a pasta or other ethnic dish.

I won't bother about posting links but there are plenty of reports on the net about meat consumption rising worldwide. There is no chance of vegetables replacing meat by 2020.

if we could be better stewards of our meat source I would feel much better about its consumption

I have to pay double the price for my eggs so the hens can have a decent life
 
Tonight we have a special dinner for a few folk at our place. I will be grilling 12 ribeyes and will also have a pasta dish, corn on the cob, and salad. By 2020...I assure you...ribeyes will still have top billing in such a meal.

I'm lucky. I have a few friends who keep chickens and I get the eggs free.

lucky you...I love how the free range egg yolks are golden, almost mango in colour

I had forgotten that until I began to purchase free range

I had also forgotten how super good chicken tastes when it is hormone free and free range...
 
If pointing out the bias of an author quoted in the OP ruins a thread I suggest the thread was ruined at it's inception.

There's even a link in the article to the author's vegetable selling site. I wonder how much he paid for the ad in the Observer?

Peas, carrots and broccoli were an afterthought—something parents had to admonish and/or bribe their children to consume.

But the balance of power is beginning to shift. Scientific research, seasonal and local food activists, environmental advocates, chefs, and increasingly health-conscious consumers are ushering in an era where vegetables will usurp meat as the star of the dinner plate. By 2020, vegetables will assume top billing in the American diet, leading to a healthier and more sustainable future.

Meat Vs Vegetables

American children are conditioned from a young age to be wary of vegetables. A study published in the Journal of Consumer Research in 2014 found that when preschoolers are told food is “good for you” or will “make you strong,” they infer that the food is less tasty and will consume less of it. In our culture, vegetables have not traditionally been presented as something delicious and fun, and the impact of this mindset is clear.

Only six percent of American adults eat the recommended serving (2 ½ cups) of vegetables per day, according to the Produce for Better Health Foundation. These numbers are even lower among preteens and teens, whose consumption of vegetables is the lowest. Meanwhile, America eats more meat than the rest of the world, with the average person consuming 270.2 pounds a year.

By 2024, these numbers are projected to increase to 94.1 kilograms (207.5 pounds) per person in the U.S. and 35.5 kilograms (78.3 pounds) globally.

so I don't see how it is supposed to decrease if it is going to increase by 4%.

so I don't see how it is supposed to decrease if it is going to increase by 4%.

the well educated, wealthy and health minded will continue to eat less meat as a percentage of their diet. the ignorant and obtuse will continue to eat their way into bad health, obesity and disease though bad diets that include too much meat.
