off the top of my head

fat bombs - 3-Ingredient Cheesecake Keto Fat Bombs Recipe – Cream Cheese Fat Bombs Recipe — Eatwell101
butter bread - Diedre's Kitchen Low Carb Bread - Low Carb Recipe Ideas (expensive to get the initial ingredients (about $80 for me) but I have probably made 20 loaves by now)
meat and cheese sticks (or deli slices)
mixed nuts
kind bars - there is an aldi brand is that much cheaper
whey protein powder + almond milk (or other milk of your choosing)
turkey pepperoni (or regular but is higher carb)
egg bites - DIY Starbucks Sous Vide Egg Bites | Keto Breakfast Ideas
adkins brand tv dinners
boiled eggs

if you are going low carb, get as much gatorade zero as you can, it makes the keto flu period less sucky

also look into healthy fats such as coconut oil and clarified butter

Low carb is sooooooooooooooo yesterday .....

Pork rinds. Goes well with diet coke.
I like eating it with home-made sweet pickled onions made with Splenda.

Sometimes I dip it in sour cream or cider vinegar.

This isn't a snack, but it's not just low carb, it's low fat.

Chunky Slaw

Dressing
3/4 cup buttermilk
1/2 cup plain yogurt
3 Tbsp wine or cider vinegar
2 Tbsp sugar
1/2 teaspoon salt
2 Tbsp green onions, shaved

Salad
1 small cabbage, chopped
6 cups fresh broccoli florets
2 green onions, thinly sliced, 2 Tbsp reserved
2 celery ribs, sliced
12 pea pods, halved
1 small green pepper, chopped
1 medium cucumber, chopped
1 cup chopped walnuts, toasted

Shave 2 Tbsp of whites from a couple of green onions, reserving tops for the salad
Make dressing and refrigerate
Toast nuts

Assemble first six items of the salad
Toss with dressing
Gently mix in cucumbers and top with nuts

This is very low fat. Except for the nuts you can make it completely non-fat. However, a dollop of mayonnaise or sour cream adds a lot of creaminess. My mother would make a salad of broccoli and cauliflower florets with a green onion and a creamy slaw dressing.

INGREDIENTS:

6 eggs
1 1/2 c blanched almond flour
4 T unsalted butter
1/4 t salt
3 t baking powder
1/4 t cream of tartar
2 t liquid stevia
1 t vanilla extract
1/2 c blueberries

DIRECTIONS:

Preheat oven to 375

  1. Separate 6 eggs into two bowls.
  2. In the egg white bowl, add 1/4 t cream of tartar, blend until soft peaks. (About 1-2 minutes)
  3. In the yolk bowl, add 4T melted butter, 3 t baking powder, 1/4 t salt, 1 t vanilla extract and 2 t liquid stevia. Blend while adding the 1 1/2 c of almond flour 1/3 at a time.
  4. Pour half of the fluffy egg whites into the mix.
  5. Pour the last of the egg whites in and softly fold in with a spatula.
  6. Lightly spray a standard bread pan with the oil of your choice, I use coconut oil cooking spray.
  7. Pour in half of the mixture, sprinkle in the 1/2 cup of blueberries. Then pour in the rest of the mix. (I pour in a little mix first to prevent the blueberries from sticking to the bottom)
  8. Bake for 25-30 minutes or until the top is golden brown. Set on a wire rack, let cool for 10 minutes before taking out of pan and cutting.
