Favorite Veggie Meals

I was wondering what are people's favorite vegetarian recipes. This isn't necessarily for vegetarians or vegans only, I am a quite accomplished omnivore, but I do make it a point to have 3 - 4 meatless dinners. I can never go vegan because milk and cheese. The other day, I made this meal (Kung Pao Edamame):

It turned out really good. I've been finding that with some of these vegetarian meals, it's hit or miss. I've made some stuff that all the sriracha in the world couldn't fix.

What do y'all have for good veggie meals? I'm not super interested in dressing up vegetables as other things, like burgers or what have you. Veggies and grains are good in their own right and I feel that you can do a better job bringing out their deliciousness if you treat them like the vegetables they are instead of trying to masquerade them as something else.

Still, those sorts of things can turn out good, so post your fav veggie meals here.

My vegetable curry is always a hit with family and friends.
 
South Asian: Paneer makhani (Although I prefer the less vegetarian murgh makhani) and palak paneer. Dhal panchmel, but I'm experimenting with more dhal recipes. At some point, I'd like to make malai kofte (fried potato-paneer kebab) curry.

Middle-Eastern: Fatoosh salad, although it's been years since I've made it, and there's another great Arab dish called mujadara. Dolma are great, but I almost never make them because they're a pain to make.


That's all I can think of, and I'm ignoring cereal dishes like grits, cream of wheat, oatmeal, etc, that I eat with eggs.

My fave veggie meal is a falafel sandwich, heavy on the tahina and hot sauce

2nd fave is a medley of indian vegetable curries with rice and naan
 
my favorite non-meat meal which meets the criteria in the OP is probably Asian rice (even if it's instant) and vegetable egg rolls with orange sauce / soy sauce. it's always a hit around here, and takes like eighteen minutes total cooking time, and that's the baking time for the egg rolls. the rice takes like ten minutes of that. perfect for a quick and fun after work dinner.
 
Collard greens, fried okra, and some pintos. Cornbread on the side.

Wash it down with sweet tea.

Plus one for falafel with tons of tahini.

My oth is...just God, fresh green Belen's, blanched, with a touch of salted butter. I can eat pounds of that.

Once in a while I'll do a full veggie spread. Grilled Portobello caps and corn on the cob, have a good caesar salad and maybe top it off with a fresh berry salad afterwards.

Also my wife love Asparagus so I've found a dozen way to prepare it. Though not all are pure veggie (bacon and Asparagus are like... too perfect) most are.

Like Broccoli? Put a full crown in a ceramic dish, brush with olive oil, salt, pepper, garlic (powder or oil), italian seasoning. Add a little water to the bottom of the dish. Cover and cook for 35 min in oven at 350. Take lid off, cover in Parmesan and bake another 10-15. MMM MMM MMM
 
Falafel ,dolma ,potato ,bean and peas with olive oil etc.
 
You can never go wrong with a vegetarian curry and basmati rice. Also, falafel and hummus are staples in my diet. Forgot to mention ramen or any other Asian noodles dish.
 
I often get cravings for individual veggies :

Stewed tomatoes.

A bowl of fiddleheads, spinach, or beet greens.

Snacking on crisp string beans.
 
Portobello parmasean

Sauté red swisschard with garlic in olive oil, add some chicken broth to cook it up and soften it, toss in some diced tomatoes and cannellini beans, serve over linguini.
