I sort of evolved over time. The Whopper was my original favorite. When I moved to Texas it was the Barbecue on every corner. Brisket smoked over wood fire for 16 hours just destroys flame broiled hamburger. Every one was different but it was hard to find barbecue that wasn't good. It became a trade off between thousands of mom and pop Tex Mex or Barbecue. I was in Heaven for years until my doctor checked my cholesterol. All good things must end.

PIPEWRENCH...I had to chuckle a bit when I read your post because that is exactly what happened to me.
I had moved back to Texas to buy a house and was staying in a fleabag motel while looking for one and doing all the paperwork.
All this time, I had not enjoyed all my usual Texas food in years. I overdosed on BBQ, Tex Mex, grits, ham, eggs, and a new thing called an "Armadillo Egg" (a deep fried mix of chicken, bacon, rice, and who knows what), Boudain balls, and all other kinds of yummy stuff.
When I checked into the new VA clinic they said my cholesterol was through the roof!
I still think it was the slow cooked brisket with its beloved fat mixed in. There is nothing in the world like it.....until you drop dead.
