Quickie Healthy Meal

Throw one can of Italian style stewed tomatoes in a sauce pan add one half medium size zucchini quartered lengthwise then sliced 1/4" thick, add a slice of butter and some salt & pepper. Simmer covered for fifteen minutes or until the zucchini is glazed. Meanwhile brown a quarter pound of ground beef and toss it in the stew five minutes before it is done. When it is done tear up one slice of whole grain bread with the crust removed in to small squares and stir in. You may want to add one half teaspoon of brown sugar if you desire. When you are ready to eat sprinkle on some parmesan cheese.
 
Along with this you can cook up a spaghetti squash (stab it with a good sized knife, microwave it until is gets just soft enough to squeeze, slice it in half and scoop out the inside with a fork). Pour the "stew" from above over the squash and it really is like eating a bowl of spaghetti!
