Man, I want some of this! Gawd, does this look good. Sounds good too. Problem is unless you live near Columbia, SC you are going to have to make it yourself. I will find a way to do that.

The next time I'm near Columbia, South Carolina I will make it a point to find out where these two guys are. Gotta have some.

Cornbread and collards are my favorite sides. I had a taste for real southern BBQ, so I went to a local called Dustin's. The ribs were fall of the bone St Louis style, delish. The sides were so-so.

There's not an opposition, just comparisons. Southern cooking is from the same stock IMO but certain secrets are guarded closely on seasoning and flavoring.

I was going to make fun of it, when I saw your post. I'm into healthy eating.

But....damn! I'd kill to get some of that food! Looks a lot better than my homemade low cal, high fiber microwaved cheese-on-a-tostado dinner that I just had.

I LIVE near NYC, yet, when I think of culinary greatness, of variety, of inventiveness with food, I think of Atlanta, GA. Soul food, mix with tex mex, mixed with good ol fashioned memphis style BBQ, under one roof, all blended.



God, it's the best food in the world, so far as I'm concerned, and I've been to a few places.

I LIVE near NYC, yet, when I think of culinary greatness, of variety, of inventiveness with food, I think of Atlanta, GA. Soul food, mix with tex mex, mixed with good ol fashioned memphis style BBQ, under one roof, all blended.



God, it's the best food in the world, so far as I'm concerned, and I've been to a few places.

Oh loved the culinary delights in NYC when I lived there with two exceptions Tex-Mex and BBQ. You see I'm originally from Texas.
 
Soul food is when you take ingredients that no one wants, and is therefor cheap, and turn it into something delicious, using creativity, and love.

Collard greens, for instance. Frankly, they suck. They taste ass marinated in piss. But if you put enough time and care into it, you can turn them into something mouthwatering...and believe it or not, fairly healthy, too. Pigs feet, beef honey comb tripe, ox tails, chicken gizards, liver, etc....turning chuck into cube steak and country frying it, and a long list of other things...the essence of it is, poor people gotta eat too, but they can't afford the better cuts of meat, the better tasting veggies, etc. So they got creative, and came up with ways to make "offal" delicious.

I'm a SC soul cooker myself. I've blown my wife and her family away with some of the stuff I've made for them, and I'm not even that great, I've just given them the simplest of things. STILL trying to get her to come around to fried chicken gizards and livers. DELICIOUS.

There are a FEW decent smoke houses up here now (NOT in NYC, though), but they charge an arm and a leg. So I make my own brisket and dry rubbed ribs and chicken.

Oh hell yes. I have a friend who works unconventionally, that is to say he has several irons in the fire and has no solid schedule. He spends a lot of time hanging out at my shop, mostly for the coffee and internet I think. But the guy can cook. We have a gas grill, a Coleman stove, a wood fired smoker and one of those turkey frier rigs, and we use them all. He makes the best fried chicken you ever had, and almost always fry livers too. Seriously, I don't order it in restaurants anymore, it's just a setup for disappointment. We are all looking forward to my first smoked ham of the season. Last year it was the day before Thankgiving. Just depends when we get the first cold snap. It's kind of my thing. I inject them with apple sauce, cranberry juice and bourbon. I used to think there was nothing better than a good smoked ham, and then I made jerky from one.

Soul food is trash, greasey is the main idea behinds it all. No wonder there are so many fat asses in this country. If soul food is good why is there no nationwide or world wide franchises? How many soul food restaurants are there in your town?

I have two smokers and will probably get a Traeger pellet smoker this winter just to mess with. I love smoking meat. I like everything about the process. I smoke year round. Of course winter is the best. I like my Weber Smokey Mountain Smoker the best. It's consistent and has a large following who share recipes and tips. We will have to share recipes.

Ain't nobody said it was for your palate. For many it is an acquired taste. As to health and weight your assumption is incorrect. There are many, many people who eat a lot soul food who aren't fat and unhealthy.

BBQ and Soul Food is international. It is growing. Sounds to me that you tried Soul Food that wasn't cooked right. There are imposters out there. In fact, slick and shiny new chain restaurants with owned and operated by white people, especially non-Southern white people would be the last place I'd try.

Here's a recent article from the BBC. It's worth reading. I found a few surprises in there myself. Mr. Ed Mitchell pictured and prominently featured in the article is a BBQ god. I'm proud to say that I used to eat at Mr. Mitchell's place in Wilson all the time. There would be limos, semis, pickups, bicycles out front. Screen door with half the screen out. Gravel parking lot. Restaurant always packed. Mitchell's smothered chicken was my favorite.

I had business with the Mayor so I knew him. Once I saw him eating lunch and I went over to say howdy. I asked him with 3 world class BBQ restaurants in Wilson was he obligated to divide his time between them. He said, Risky, I eat here at Mitchell's twice a week whether I need to or not.
 
We've got a local steak house that makes sole food. Don't order anything medium, it comes out like jerky.

Honestly, there's lots of southern food I love. I'm not a big fan of fried chicken though. Haven't eaten it in decades. Give me all the rest of it though.

KFC. Popeyes. Arby's. BoJangles. Sticky Fingers. Just off the top of my head.


And yeah, the bulk of that list IS greasy crap food. But then, Olive Garden ain't exactly the best, either, is it? Does that mean italian food sucks? Or just that when you mass produce and commercialize something, a good bit gets lost in translation?


And yeah, you have perfectly described BAD soul food. The kind that gets served at the restaurants I listed. The best soul food, IMO, doesn't GET served in restaurants. Sad to say for you, but, unless you know someone who will cook for you, you're not like to find any very good soul food near you, unless you live somewhere where it's popular. Like the south.

I will say this. Don't let a few bad experiences turn you off to the idea of trying it again. You never know.
