I always have more time to cook for myself in the summer. What are some of your favorite healthy recipes for breakfast, lunch, dinner or even snacks?

hi josie . A tasty and healthy breakfast should contain foods full of protein and vitamins that keep you full untill dinner .egg salads , yoğurt ,olive ,cucumber avocado salads with olive oil , kiwi ,strawberry and such berries ,orange juice ,almond etc.you can make so many different light dishes with these foods.I would advise grilled fish chicken and vegetables for dinner and lots of water .

Spaghetti squash as a substitute for linguini.

Use a large kitchen knife to slice into the center of the squash. Don't cut it in half yet but make sure that it's sliced deep into the meat. Nuke it for about 5 min until you can squeeze it easily but not until it's squishy.

Take it out and slice it in half. Be careful because it's going to be really, really hot.

Hold it with a rubber pot holder (the cloth ones slip) and scrape out the insides with a fork. You'll get a good sized pile of stringy squash.

While the squash is cooking saute a can of diced tomato with garlic, onion, basil, S&P and olive oil. You can add pancetta or cooked Italian sausage if you like.

When you have the squash "spaghettified" just add it to the pan sauce and toss until it's all mixed together.

This works especially well when paired with a bottle of a good Nero D'Avola or Sangiovese.
 
in a pan, fry a pound of bacon
while waiting for it to complete, peel a pound or so of potatoes
slice potatoes into thin rounds
remove crispy bacon from the pan and place the potatoes in the hot bacon grease
stir periodically until the taters edges begin to turn a light brown
remove potatoes to a plate lined with paper towels
add salt liberally
place bacon - now in pieces - on top of cooked potatoes
enjoy
discard your bathroom scales

couldn't resist
my wife is the one who is now exploring healthy recipes. when she returns from school i will try to share her favorite recipe (probably mango smoothie). certain to be more healthy than mine above
 
I like raw Jicama as a healthy snack. It tastes like a pear with some hints of apple. I don't have a healthy breakfast I can recommend other than boring yogurt with granola or banana w/unbuttered whole wheat toast. When I eat breakfast, it is either sausage and pancakes or bacon and eggs on toast most days. For dinner, I can eat a salad or a sandwich and be fine on most days. I eat throughout the day so dinner is not a requirement.

you should add leeks or onions to that.

Leeks and-or onions and fried potatoes are good eating. I sometimes use bacon grease in my fried potatoes just to be rid of it though it tastes the same using cooking oil, but yous guys seems to take it to a whole level of too much. Life is short, some lives shorter than others :tongue4:

Jicama is also great with a little lemon or lime juice. And for an extra burst of flavor, add some Tajin spice.

I have not tried it yet, but I am told that you can make french fries out of it. I add it to soups as a base sometimes but cannot state that it adds anything noticeable in the way of flavor to them. It is more a texture addition than a flavor one.
 
It's not fancy but mixing various fresh berries (even thawed frozen ones) into instant Jello sugar free pudding made with low fat or no fat milk makes a great healthy dessert.

The French fry thing sounds interesting, they do handle similar to a potato. Though they taste nothing like a potato. I love sweet potato fries though, and Jicama has a mild sweet flavor. I'm betting they'd be good. :)

I do not like sweet potato fries. I can eat one or 2. It is the texture that bothers me. The flavor is alright. They are usually crispy on the outside but baby food mushy on the inside, and I hate that.
 
Chick peas tossed in olive oil and baked in the oven til they get crispy. I season them differently every time, sometimes ranch dressing powder, sometimes alittle spice, sometimes I mix saracha with the olive oil. They are amazing healthy snacks if you let them really cook and dry out (over an hour usually). Perfect if you want something that's crunchy and alittle salty but healthy.

Also make swwet potato burgers with chick peas, cooked sweet potato and some bread crumbs and an egg. Random recipes are all over the internet for it and they always come out great for us.

ok. here's my spouse's current favorite recipe as received from her email:
I pretty much half everything or it's too much. Also used lime juice rather than taking the time to zest a lime.

Mango Smoothie
· 1 1/2 cups (360ml) freshly squeezed orange juice
· 1/2 cup (120ml) water, plus more as needed
· 1/2 medium avocado, pitted and peeled
· 1/2 teaspoon finely grated lime zest
· 1/8 teaspoon ground cardamom
· 2 cups (320g) frozen mango
· 1/2 cup (62g) ice cubes
Throw all of the ingredients into your blender and blast on high for 30 to 60 seconds, until smooth and creamy. Add more water as needed to blend.
Boosters: 1/2 teaspoon wheatgrass powder; 1 teaspoon chia seeds; 1 teaspoon flaxseed oil

your choice, i'd stick with the fried taters
