meatloaf - don't let it

That sounds a LOT better than what I've imagined, I'll put it on the growing list of things I absolutely must eat when I visit the states.

Do you eat it hot or cold like traditional pâté? I've looked at images online since and it actually is beginning to sound like something I might try and make before I get to America - but then I don't want to ruin the experience of the real thing.

Actually, pate is much better. Meatloaf is pretty much what it is - a loaf of chopped meat with some other ingredients to flavor it. If you like meatballs, you'll like meat loaf (though there is a slight difference) Pate, is a whole 'nother thing.

Meatloaf is meant to be eaten hot, but it's pretty good cold on a sandwich. If you order it in a restaurant, it will be hot and will either have a ketchup based coating, or will be served with a brown gravy. I think the ketchup thing is more common at home and the gravy more common at restaurants (at least, that's my observation). I like the gravy better.
 
Coincidence, just finished some meat loaf and came across this thread. I love meat loaf. Fairly lean ground beef, celery, garlic, mr. dash, sauteed onions, ketchup mixed in with ingredients which also helps keep moist I think, and egg. Never tried bread crumbs yet, maybe next time. I didn't know about using the thermometer though.
 
There are more recipes for meat loaf than there are people in the world.
