Most valuable cooking tips you learned from your mother and/or father?

I always cook my turkey upside down. It's not beautiful, but the breast cooks in a lot of butter, and I use celery, apples and onions as aromatics, so the flavor seeps through the breast as they break down. Amazing, and the breast is so tender.

Also, when cooking cheesecake, it is IMPERATIVE to let your cream cheese and your eggs come to room temperature. THAT is what makes your cheesecake crack.
 
Most valuable cooking tips you learned from your mother and/or father?

From my mother...
1) When having pancakes or waffles or french toast... always heat the syrup. Makes a world of difference.
2) When having hamburger or brats or hot dogs... always toast the bun. Again, huge difference.

Be sure to have a large collection of menus for local restaurants that deliver
 
Now, I'm suffering from tool-envy. I have a girlfriend who makes beautiful furniture, and I am hopelessly incompetent but so admiring! Terrified of electric saws and stuff.

I still won't use a table saw. I've seen more than one finger lost due to them, and I am intimidated by them. Otherwise, I'm pretty comfortable with most tools.
 
When my boys were five and seven I taught them how to make a hot meal for themselves without using the stove.
1. Toast two pieces of bread in the toaster.
2. Put a slice of american cheese on each piece of toast.
3. Put them on a plate and into the microwave for 20 seconds.
4. Smoosh them together and add ketchup to taste.
Two minute, hot grilled cheese sandwich!
I am convinced that I saved the house from burning down with this instruction and I have been told that my oldest boy who is now 30 still makes grilled cheese sandwiches employing this method to this day.
 
When making cabbage rolls (stuffed cabbage), freeze the cabbage and defrost it instead of boiling it. Makes peeling off the leaves much easier! Took my mom 20 years to fill me in on that secret. I should buy her nice Mothers Day gifts more often. I might learn more tips.

I cooked a turkey upside down on accident once. The breast meat was very tender and moist.
 
Best advice was from my dad. "Don't cook like your mom"
 
From my mom came these tips:

Always scrape the browned fond along the sides of the sauce pan and mix it in when you're simmering anything. That fond provides extra flavor to your cooking.

Always clean as you go. Wash or rinse your equipments as you're cooking.....which is really great when it's become a habit. You're not left with piles of dirty stuff, and nothing gets crusted. Sometimes, all you have to do is rinse what you've just used! It also makes for a well-organized cooking.
