I just ate my first mango and I tell you know it is the fruit of the Gods (and very healthy) Peel if first.
There are many different types of mangoes, with the typical red green and yellow ones being most often found in stores. These tend to be a lot sweeter than other varieties. There are also greenish and yellow ones, here in Florida we get a variety, and often have people selling them by the flat at roadside stands, or there are Hispanic or SW Oriental specialty grocers that carry what I think are the REALLY good mangoes.
Unfortunately I live about 75 to 100 miles too far north to have a Mango tree of my own, but there is a place that I have often gone kayaking and boating south of here that has a mango tree right near the boat launch- and they are nice and tart mangoes, just like I love em.. I always make it a point to pick a bunch to take with us for our day out on the water when that tree is fruiting.
There are so many good things you can do with mangoes. And I agree that they go great with spicy food and heat. I use them in hot sauces that I make, chutney, and then of course there is Mango chow which is a Trini (Trinidad) dish that is simple to make and fantastic.
Mango chow is basically wedges of mango with scotch bonnet peppers, garlic, shallots, cilantro (or more traditionally shado beni if you can find it also called "culantro") and lime juice. Yummy!!!
and then there is my Kiwi Mango salsa that I make.. also packs a lot of heat: kiwi, mango, habenero pepper, honey, ginger, cilantro, and lime juice> I make that up and let it sit in the fridge overnight for the flavors to meld.. For simplicity I sometimes just scoop it and eat it on plantian chips, or I also use it as an accompaniment for ceviche when I make it, or served over a salmon steak (or other seafood/non mild fish). aughh I am getting hungry now.
