Food porn!

These pics remind me of a poster I knew on another forum. He was from Chicago. Always took tantalizing pics of his meals out. Tell me Pos are you from Chicago? The one with the beans and bangers definitely looks like something served in a diner in those parts.

Im originally from L.A. (So Cal) but I do like the Bears though. ;)

First time I ever had an English breakfast was when I was on a business trip to London, I was shocked they served canned beans with it. The other stuff I could handle (love eggs with bangers but the British bacon tends to be too think and undercooked, imo) but canned beans for breakfast? Eeew.

I've got the best recipe in the world. It's from the world famous Jekyll Island Club Hotel, and their shrimp and grits are award winning. :D :D

SHRIMP – N – GRITS

Shrimp Butter
1 stick unsalted butter (4 oz.)
3 tbsp bacon fat
1 tbsp minced garlic
½ tsp paprika
½ tsp chopped thyme
½ tsp chopped parsley
½ tsp chopped oregano
Mix all ingredients together and set aside.

Shrimp Gravy
Shrimp Butter
1 bundle green onion, diced
½ lb. Andouille sausage diced
1 lb. GA White shrimp p&d
1 tbsp flour
3 oz. white wine
1 juice of lemon
¾ cup heavy cream
Old Bay seasoning to taste
Salt and pepper to taste

Cheese Grits
1½ cups stone ground grits
5-6 cups chicken broth
1½ cups grated sharp cheddar cheese
½ stick unsalted butter
Salt and white pepper to taste
Bring broth to a boil and add grits, turn heat down and cook slowly for about 40 minutes, stirring often. Add cheese and butter and adjust seasonings with salt and white pepper. You want the grits to be tight.

Heat the shrimp butter in a sauté pan. Add sausage and onions, sauté 2 minutes over medium.
Add shrimp, wine and lemon juice, cook for 2 minutes. Sprinkle flour on top and mix well, then
add Old Bay and cream. Simmer until shrimp are cooked and cream has reduced a little bit.
Adjust seasoning with salt and pepper.
Spoon grits into a bowl and top with shrimp gravy, garnish with scallions and enjoy!

I made a slight change in mine, though. Although I love Andouille sausage, I had shrimp and grits at The Shrimp Factory in Savannah, and they used bacon. They took bacon and baked it in the oven, and at the end of cooking it, they added brown sugar to the bacon to sweeten it. It was so much better than the sausage, so I followed their lead. I crumbled up the brown sugar bacon and put it on top, after everything else is done. I like it a lot better with the bacon, but you could probably use both. It's all about layering flavor, so adding more flavor couldn't hurt.

Scottish breakfast OTOH is fantastic. I recall when I was young backpacking around Europe we found a bed and breakfast along Loch Ness ran by a widower who was lonely and was just letting out her spare bedrooms for the company. There was no way she was making money off from the deal, the cost of what she cooked for breakfast was almost certainly more than the pittance she was charging per night there. eggs, ham, at east 4 kinds of sausage (this is where i got introduced to both black and white blood sausage.. mmm), potatoes, and i cannot even remember what else.. it was a feast. We ended up staying there a few extra days just because the scenery, the food, and our hostess were so great.
 
This is my idea of the perfect breakfast, eggs over easy, with toast for dipping of course! Bacon and homefries with garlic and onions (YUM!), and a nice big glass of orange juice. I think homefries might be one of my favorite foods. :)

LOL. To be fair an English breakfast is so similar to an American breakfast compared to other cultures, the main difference is really the sides, English bacon tends to be slightly thicker and they dont cook it to crispyness like we do; their sausages like bangers, black pudding and stuff tend to be quite good, very tasty like ours, and they do have toast, fried potatoes and eggs like we do so more similarities than differences (I think the big difference between them and us are their use of canned beans and fried tomatoes while we prefer pancakes to go with ours). The real different breakfasts Ive tried like in China which is dim sum (steamed dumplings with tea) or smoked fish and miso soup in a Japanese inn in Tokyo are way way different.

I know how to make homefries just like the ones in that delicious food porn pic. This technique was taught to me be the chef at Ramblers.

First you boil the potatoes. Leave them in the fridge for while then

Then fry them in clarified butter and/or bacon drippings..

SSSSUUUUPPPEEERRR delicious.

I like to saute minced garlic into it when I make clarified butter. Some people call it ghee, some call it drawn butter and some people call it clarified butter. I'm really not sure what the difference is. Just different terms for the same thing perhaps. :shrug:

It makes home fries delicious.

I'll have to try that one of these days. I usually make mine with just a pat of plain butter or margarine and some oil.
