the lunch thread

Leftover lasagna from dinner last night - one of the best homemade I think I've ever eaten - made by my neighbor's Italian hubby! I made a small salad to go with it..... :thumbs:

I can relate to this, polgara. I took my son over to my friend's house for Christmas eve dinner and I cooked lasagna for them. My friend loves pasta so he was amazed at my lasagna recipe (I started with a sofrito, then used lean pork, Italian garlic sausage and serrano ham in addition to the ground beef to give the meat sauce a really intense flavor). Took me 3 hours to cook it but everybody raved about it when it was served. :mrgreen:

Ooooh, that sounds good! I wonder if he used all those different meats, because I'm not joking when I say that was the best lasagna I have ever eaten! :thumbs:
 
Today for lunch I pulled out a container of veggie soupfrom the freezerr I made from the ribs of the standing rib roasts we had for Christmas dinner. It was around 3:30 we had lunch.
Everyone was going to fin for themselves for dinner. I really need to go to the market because Ole mother Hubbard's cupboards are bare. Yet I took a Honey Crisp apple cored and diced. Added a handful of mix nuts that I pounded into small pieces and added it to the apple. Then I drizzled it with honey my brother harvested from his bee hives. It made up a whole soup bowl full that I ate with two pieces of Jewish Rye bread toasted with butter. Man it was awesome. My belly is full and it is time to prepare for bed. An apple, nuts, honey and Jewish rye bread made a most wonderful meal.
 
i caught the respiratory crap that is currently making the rounds, so i have been loading up on garlic. today's lunch was a low fat ricotta and spinach with a metric ton of garlic powder and a side of French sourdough. made me forget that i was sick for a minute.
 
homemade chili w/ garlic hot sauce.
 
A handful of corn nuts that I yoinked from my son.
 
Wrap: Mayo, lettuce, cheddar, w/ sauteed ground beef, onions, mushrooms, ghost chilis.
 
A donut and some coffee. Bite me.
 
Today I made pancakes for breakfast because we were down to one egg in the fridge. I have to say they were probably my best pancakes ever. I didn't measure one ingredient yet they were light and fluffy....they were perfect. I will probably never ever produce the same result again.
We skipped lunch because breakfast was at 10:00. That resulted in an early dinner of fish, chips and slaw. It was awesome but I have to go to the market tomorrow because even though there are things around here to eat, I don't have everything to fix anything.
 
1/2 BLT
peppered kettle chips
 
leftover pizza from a regional favorite
breadstick
couple tablespoons of home made cheese dip
recipe : 1 block velveeta, 1 can Hormel chili w/ beans, and 1 jar mild salsa.
 
We had some pork and cabbage yesterday. Today, for lunch/dinner, I just pull the leftover meat, add some BBQ sauce, some jalapeno slices, some onions and a few pickles and enjoy.
 
Breakfast:

Ramen noodles w/ thai chili and eggs beaten in slowly, w/ galangal, lemongrass, little vinegar, lime juice.



Lunch: Another one of my fiery beef wrap things.
 
Falafel sandwich with extra white sauce from the Halal Guys and black forest ice cream for dessert.
 
Breakfast:

Ramen noodles w/ thai chili and eggs beaten in slowly, w/ galangal, lemongrass, little vinegar, lime juice.



Lunch: Another one of my fiery beef wrap things.

I love Ramen with a little extra stuff. You are making me hungry.
 
Leftover black bean cutlets with spinach dip
 
Breakfast: Whole Oats with walnuts, blueberries, and some Whey Protein Powder

Snack: Half avocado on whole grain english muffin.

Lunch: (some variation of this is what I eat most days for lunch)
Apple
Whole Grain Salmon Wrap
Spinach and Fresh Berry Salad
Serving of Brie and some Almonds
Orange
Greek Yogurt with Fresh Fruit or Berries.

Late Afternoon Snack:
Quest Protein Bar
 
grilled ham and cheese on 15 grain
vegetable barley soup
 
Leftover bowl of white chili. Chili is always better the next day.

Matter of fact, I have been known to make entire batches of chili and not serve it till a couple days, because of how factually accurate this statement is.
