green eggs and ham

It really exist and I had it this morning. Went out to breakfast and saw it on the menu so I had to give it a try, delicious! It was a slab of ham with scrambled eggs on top of it covered in pesto and topped with avocados. The guy next to me eating biscuits and gravy was giving me funny looks though.:lol:
 
My wife made them for my boys when they were little. Food coloring in the eggs is all she used. My kids LOVED it!

My wife is cool like that, I think I will keep her........ :D
 
It really exist and I had it this morning. Went out to breakfast and saw it on the menu so I had to give it a try, delicious! It was a slab of ham with scrambled eggs on top of it covered in pesto and topped with avocados. The guy next to me eating biscuits and gravy was giving me funny looks though.:lol:

too early for arugula, yuppy?

I have never heard of that combination, but since I like ham, eggs, pesto, and avocados, I need to try that.

I'm for putting pesto on anything. We're talking about nectar of the gods level **** there. But despite my love for avocado, I'm not sure about mixing it with eggs.
 
I have a 60ft Avacado tree in my yard... Between mid Nov and Mid Jan, I have more avacados than I can eat. Normally more than I can give away!
Any new ideas or recipes using avacadoes are much appreciated! THANX!

I just like it fried for a few seconds on either side.



As for pesto, it just depends on who makes it. I have had some really good pesto and have had some really, really bad pesto.

bad pesto sounds like a bad blow job. Surely you can find better, but was the experience really a negative?

My wife makes it from stuff she grows in her garden, you haven't had pesto until you have had fresh pesto.

He looked at you like Bob Seager said walking in to a restaurant and all the eyes upon you, "is that woman or a man"? As much as I like my biscuits & gravy your dish sounds great.
