Really? White bread is white bread, how could it be less good in the South?
Ok mate I will try to explain, I hope this does not sound anal.

I buy my beef from a farm that rears the beast, it is sent to the abattoir and the carcass is then cut into 6 to 8 pieces.

I buy then a piece called in the UK "choice cut" its the rump, sirloin, and fillet on the T bone, it may weigh 40lbs or more depending on the breed of beast.

So I pay for 40lbs of "wet" meat it is then hung in the chill room for 30 days and looses around 10 % of its weight in fluids.

This hanging makes it natural enzymes break down the fibres for tender meat and more flavor.

The meat is also dry so it will sear and caramelize, not steam in the pan.

If you by pink supermarket beef you are paying for water!

That's why I buy my meat sent from a ranch in colorado that treats it the same way. I get a package of different cuts about every month or so...less the past few months because I have cut meat out of my diet at least 4 days a week because of health reasons. They age the beef and then ship it overnight to me without it ever having been frozen. I love that first piece of tenderloin roast...and here is how I do it up:

I wash it and dry it with a kitchen towel. Then I rub it with salt and pepper and smear it with the following mixture:

Butter
Dijon mustard
minced garlic (just a little though)

Then I cook it in the oven on 525 F until it sears on the outside and is still almost raw in the very middle. It just doesn't get any better than that with some matchsticked sweet potatoes and a warm guiness.

I would kill to have a place where I can hang and age the meat myself. And salt cure hams and such. But for now, I am content with my herb garden.

It's only 10:30 PM here and I usually go to bed around midnight or so. As for health issues, I had a row with the big C over the past year (surgery fixed the problem) and I had some liver issues from all the drugs so I went on a low protein diet just to relieve some stress on my liver. I haven't minded giving up so much meat, actually...the health benefits have been astounding plus it seems to have slowed some of the wear and tear on my body, visibly so. Since I just turned 33, I am grateful for all the saving of my youth I can get.

So your leg...is it diabetes or cardio-pulmonary related? And feel free not to answer that as I am usually pretty guarded with my health info. The only reason I even talk about it now is that I am well on my way to a full recovery.

Its raining so I came back early, I realized as I was "walking" that maybe I should not have inquired

56yrs ago I had polio, they said I would never walk, I played sport to quite a good level.

6yrs ago at 52yrs my right leg gave way at the top of a flight of stairs.

They wanted to remove it the, so as I was attached to it I left the hospital and with the support and help of my much younger wife we sorted it up until a year ago when it gave way again.

The bones because of polio may not take a graft or screws so I want to give myself a good chance by taking off the 36 lbs that I have added.

A guy who had his leg off at the same time I was in hospital walk well and can even run, and he has no pain, so I am in a win/win position

I know you know about resting the meat after you take it out of the oven mate but other people here may not

Sounds fab, but its a no meat diet for me till August.

Do you cook puddings (sweet)?

I worked, years ago from Capitol Towers and lived in West Hollywood LA for six months

The thing about here that really amazes me is how people think that puddings are always creamy concoctions. They don't recognize that there are breaded puddings like Yorkshire pudding or even meaty ones like blood puddings. I serve an "english pudding" sometimes at dinner and everyone is all like....where was the pudding?

West HW is probably nothing like you left it. It's so pretentious and sour I can barely tolerate it and there is such a sense of pretention about the whole place I find it more of a burden to visit than a pleasure.
