Re: What did you have for dinner?
Now this is a good quick sammich...
get yourself a boneless pork chop, thick cut..... Can of spinache, and some SHARP provelone cheese.... Season your pork chop with some canola oil, and a bbq rub, add a sprinkle of clove and old bay.... to the spinach, add a clove of smashed garlic, salt and pepper...... Grill you thas some bitch on one side till charred, flip it, top it with the spinach, then the provelone..... le it cook till no more than 155 degrees........ At about 130-140 degrees throw a portugese roll on the warmer....... take it off at 155, sammich it, and let it rest for 5, brining the temp of the pork to a perfect 160is.... and you get:

Re: What did you have for dinner?
Say, rev, do you buy meat fresh, or do you like to store it in the freezer? Do you have a preference?

Both.... I usually have no less than 3 full packer briskets, 3 full 20lb pork shoulders, a couple turkeys, ribs, various steaks, game meat, etc.... I will buy a ton of meat when it goes on sale (I have I think 20 slabs of pork ribs, they were $0.99 a lb, I jumped on em). But, Depending on when or who or why I am cooking, I'll get fresh kill meats from one of several farms in the warwick/sussex valley.... Fresh is always better, but single frozen meat is not bad at all... (I avoid refreezing at all costs) |

I like to buy in bulk and freeze too, save tons of money. I usually buy ribs, tenderloins and other more pricier cuts when they're on sale. But I find frozen fish just doesn't taste the same as fresh. It seems like it makes a huge difference. |

Re: What did you have for dinner?
Rev. Hellhound,
You would fit right-in here in the South man, with all that meat.. Whenever I would visit my hunting friends we would always go gather food for meals from their freezers, which would be full absolutely full of venison and rabbit and steak. |

Lightly butter the roll once it comes off so that the juices don't soak through midway through eating it. |
