I decided to take GOOD Magazine's challenge to forgo meat for the month of June. I know that we aren't that far into the month yet, but I already feel a lot better. Previously I had either beef or chicken for almost every meal of every day. To my surprise I've found plenty of stuff to eat that actually tastes good, and I've been able to eat a lot more fruits, veggies, beans, and whole grains than I otherwise would.
After this month is over, I don't plan to go without meat altogether, but I definitely think I'll be eating a lot less of it. Do any of you vegetarian folks have any suggestions for how to make your diet work over the long haul?
