I would suggest it's not as a result of lack of demand by US Americans, but by US Educators who seek to control the narrative.

It would take too much attention away from the white people.

I think if Thomas Jefferson were looking down, the author of the Bill of Rights, on whats being proposed here, hed agree with it. He would agree that the First Amendment cannot be absolute. - Chuck Schumer (D). Yet, Madison and Mason wrote the Bill of Rights, according to Sheila Jackson Lee, 400 years ago. Yup, it's a fact.

Due to a lack of education on the subject and some sociological issues involved with ethnicity. Your version of Indian studies seems to be a ploy to bolster the reputation of whites, not the study of Indian culture itself.

If you remove the month, the idea is that throughout the curriculum African Americans would find themselves present and accounted for in weekly discussion. I assure you this is often not the case.

For the same reason that white Americans or Native Americans, women, or anyone else should. They each were important to the history of the country. White males incredibly predominate the narrative, whereas a lot of everyone else do not. You do not just ignore everyone else.
I am well aware of the connotation that has been assigned to fried chicken and watermelon. That's not the point. Why don't we just ban those food items all together, since it's appearance on any menu suggests racial bigotry by the purveyor. At some point the PC crowd needs to be ignored.

As to narratives, I think you are applying facts from the past, as opposed to those in the current curriculum. The pendulum has swung far from it's previous position.

Of course they could have easily substituted ribs for the chicken.

Usually in cases like this what I have found out in my many travels and old age is the ones who are offended are the ones who wanted to be offended.
This Reform Party member thinks it is high past time that we start electing Americans to congress and the presidency who put America first and their political party further down the line. But for way too long we have been electing Republicans and Democrats who happen to be Americans instead of Americans who happen to be Republicans and Democrats.

You find that the families who were critical of this lunch are melodramatic. I see you are attempting to outdo the perceived melodramatics with histrionics of your own. All that was needed was to not promote it as a "Black History Month lunch."

I'd like to know your target for the previous position so as to determine how to respond to this. It did not quite make sense to me.

A ploy? You assign far too much depth to my simple words and opinions. What is education? Is a lack of knowledge on a subject the result of a lack of desire to learn it, or a lack or desire to teach it in the first place?

Unfortunately, we are in an era of agenda driven education in the United States, and the results from that objective are quite visible.

If peanut butter weren't a modern WMD, it would.
