Anyway, horse meat tastes like deer, in that it's dry, tough, and gamey. Cooked right (read, STEW) it's OK. The only reason why folks every really ate the stuff was for lack of any other meat to eat. Generally, cows are better, and they cost less to raise, so I doubt horse meat is gonna catch on in the states, since even the cheapest chuck steak is on par with horse, and will cost a LOT less.
You want a GOOD meat, got for buffalo. Bisen is like the tuxedo of meats. Make yourself a good buffalo burger...yeah, it may just be the most expensive burger you every made...but oh man, it's good!
While the better meats, and better cuts, require less work. Take the ribeye, for example. Best steak in the world, in my opinion. Just grill it, with some salt, pepper, onion and garlic. Done. Or rib meat off a pig. That stuff's delicious no matter HOW you cook it...
Food is food. Let them eat horse...some of us already eat cat and dog.

As someone who is very fond of horses, has spent time with them, and who has owned two; I will not do business with any restaurant chain that uses horsemeat or any grocery that sells it. Period. It's a disgusting concept to even consider so far as I'm concerned.
Why not? It's not like it's cat or dog flavoured, they can be an acquired taste.
