Mortars are your best friend.
Yeah, I finally destroyed the fort that's in the main mission, and mortars did the trick. I still haven't figured out how to hunt a whale or shark. I hear my crew commenting that there is some good meat down there, but then I get attacked by some ship, and there is no stopping to rest. I did go back to where the whale was sighted, but had no idea how to proceed, unless that is some future endeavor, and I will get to it, eventually.
Regarding forts, I hate those sections with the forts where you have a storm and can't go full sails. That's my whole plan of attack. Hit them hard, then go to full sails and escape.
Is this game addicting or is it just me?!?
I haven't bothered to journey into the MP portion, anyone have an assessment of it? Redundant or worthy of my time?

Little area in the water usually with birds flying around that you sail into and it will tell you to push whatever button to begin.
Do some ship battles and upgrade your ship a little before doing forts.

Yeah, I lucked into a whale hunt. Took me at least 3 times to kill the humpback whale. For some reason, I kept holding down the mouse attack button, something you had to do in AC3. It's hard to get out of old habits with these games when Ubisoft changes the controls on you. Yeah, I discovered the mini-ship game a couple of days ago and find that pretty simple, plus being able to pick up extra funds. It beats looting dead bodies, or pickpocketing citizens. For awhile, I had no missions, until I saw the sea battle button down in the lower part of the screen. There is a lot to this game that I just luck into finding. I especially despise the missions where I have to tail a guy, who walks into a fort that is heavily guarded and then I have to find an alternate way in. I don't worry about 100% synchronization and wonder what the heck is that for, in fhe first place, unless it opens up parts of the game that I wouldn't see without full synchronization.
If you complete half of the assassin missions (really easy once you get the blowpipe), you get a "stealth" outfit which makes it easier to hide.
I have the blowpipe, already but don't know about a stealth outfit. I guess I should check the outfit section in my ship. I'm still wearing the brown outfit. I did see the Altair and the Ezio outfit but couldn't see wearing those. Half the time, I forget I have the blowpipe. If I use it, I prefer the berserk darts, which make it funny watching the guards go at each other. I wait around watching them, that I forget I have somebody to tail.
You automatically get the stealth outfit once you complete half of the assassin contracts. The contracts are marked as skulls in the villages.
Well, I got the blowpipe after doing the "Nothing is True" mission with James Kidd. I haven't completed all of the assassin contracts, only when I see them. Lately, I have been following the storyline, rather closely and ignoring everything else. There is a lot to see in that game, other than just the storyline.
I also find it quite annoying that you can't crouch when you want to, only when you're in the bushes, or perched in a tree or ledge.
You can generally push through the story quickly without upgrading the ship much. But you need to craft some health upgrades if you haven't already.
